The Warsaw-based restaurant hub.praga has entered the ranks of Polish eateries awarded Michelin stars, as announced by Michelin.

„The most thrilling news from this year’s edition is that hub.praga has become the third establishment in Warsaw to earn a MICHELIN star,” Michelin stated in a press release. The restaurant was recognized for its „exceptional focus on detail and flawless culinary technique displayed in every dish.”

Up to this point, there have been five restaurants in Poland that have achieved one Michelin star. „All of them have retained their accolades: Arco by Paco Pérez in Gdańsk, Giewont in Kościelisko, Muga in Poznań, along with Warsaw’s NUTA and Rozbrat 20,” it was reported.

Additionally, there is one restaurant in Poland with two Michelin stars. This is Krakow’s Bottiglieria 1881, which has held this honor for the third consecutive year. „The bold flavors and uniquely original dishes delighted the Inspectors. They concluded that the cuisine fully merits this esteemed recognition,” the company stated.

The tradition of awarding Michelin stars to restaurants dates back a century. They were first introduced in France in 1926 and remain the pinnacle of recognition in the restaurant industry. In Poland, the first star was awarded in 2013 to a Warsaw restaurant, followed by others in Kraków, Poznań, Kościelisko, and Gdańsk.

Michelin stars and evaluation standards

One star signifies that the restaurant offers high-quality cuisine, very good within its category. Two stars indicate excellent cuisine, showcasing refinement and talent. Three stars represent cuisine where the creators have reached extraordinary levels of talent, regarded as a work of art.

According to Michelin, five evaluation criteria exist: the quality of ingredients, flavor combinations, mastery of culinary techniques, the chef’s individuality expressed in the dishes, and the overall coherence of the menu. Conversely, the restaurant’s service or style does not influence the evaluation.
